Spring Fruit Salad

This refreshing fruit salad is the perfect spring dish any time of day. Take it to work, have it for breakfast, save some for dessert – this is the pick-me-up your daily diet has been waiting for!


  • 2 pints

    ripe mangoes
  • 1
    ripe pineapple
  • 1
    star fruit
  • 3 tbsp
    coconut sugar nectar (or maple syrup)
  • 1
  • handful
    chopped mint (to taste)

    Rinse fruit well and pat dry with paper towel.

    Chop fruit into pieces that are consistent in size. Cut strawberries into halves or quarters, but leave blackberries and blueberries whole.

    Combine strawberries, blackberries, blueberries, mango and pineapple in a bowl. Drizzle chosen sweetener evenly over fruit

    Squeeze the juice of one lime over fruit as well and toss together.

    Add chopped mint for garnish.

    Slice star fruit to the top of your salad and ENJOY!
