Shaved Brussel Sprout Salad

  • 4-5 cups
    shaved brussel sprouts
  • 1/4 cup
    thinly shaved red onion
  • 1/2 cup
    chopped walnuts
  • 1/4 cup
    pitted and chopped dried dates
  • 2-5 leaves
  • 1 teaspoon
    maple syrup
  • 2 teaspoons
    olive oil
  • pinch
    salt & pepper

    In a large bowl combine clean, shaven brussel sprouts and red onion.

    Squeeze one lemon over the mixture then drizzle in olive oil–enough to dress the salad, but avoid making the mixture too wet. You can always add more but you can’t take it out!

    Salt and pepper to taste. Drizzle maple syrup.

    Next, incorporate the walnuts and dates. Keep in mind your dates may be stuck together. Simply pull them apart and place them in your salad.

    Sprinkle in fresh, chopped mint. Don’t fear the mint, it really enhances the flavor of the whole salad. (Also, slapping the mint leaf prior to cutting helps to open the veins where the flavor is most concentrated).

    Salt & pepper again if needed.

    Toss time! Eat and enjoy

    *Remember, you can add more or less of any ingredient. Prepare and assemble to your taste–healthy eating should still be indulgent and enjoyable.
