Roasted Curry Cauliflower

Ingredients

    head of cauliflower
  • 1/4 cup
    chopped raw cashews
  • 1/4 cup
    chopped dates
  • 1 handful
    freshly chopped mint
  • 3 tbsp
    tahini spread
  • 1 tsp
    maple syrup or agave nectar
  • 1/2 tsp
    curry powder (yellow)
  • 1/2 tsp
    Garam masala seasoning
  • 1/2 tsp
    cumin
  • 1/2 tsp
    paprika
  • 1/2 tsp
    salt
  • a dash
    cayenne
  • 2 tsp
    cooking oil

Instructions

    Clean and chop cauliflower into small florets.

    Pat dry and place on baking sheet.

    Sprinkle salt, curry powder, garam masala, cumin, paprika and cayenne liberally on florets. Making sure cauliflowers is coated evenly with seasoning. Drizzle with cooking oil and toss together.

    Place cauliflower mixture in oven at 425 degrees. Roast until tender.

    While cauliflower is in the oven. I’m a small bowl add 3 tablespoons of tahini spread. Vigorously whisk in oil. Squeeze in the juice of a lemon. Whisk in 1 teaspoon of maple syrup or agave nectar. Add salt to enhance flavor.

    Once cauliflower is removed from the oven. Top florets with chopped dates and cashews. Drizzle tahini sauce on and toss together. You want to make sure that the cauliflower is coated and all ingredients are thoroughly incorporated.

    Top with fresh mint and ENJOY!
