Asian Chopped Salad

Ingredients

  • 1 bundle
    kale
  • 1 cup
    red cabbage
  • 1/4 cup
    green onion
  • 4-6
    sliced red radishes
  • 1/4 cup
    tri-colored peppers
  • 1 tbsp
    spicy pepper
  • 1/4 cup
    cashews
  • 2 tbsp
    black sesame seeds

Instructions

    Make ginger dressing first and set aside for later use.

    Grate 2 tablespoons of fresh ginger and put in a small mixing bowl.

    Add 2 tablespoons of liquid aminos (or coconut aminos)

    Add in rice wine vinegar

  5. 5

    Add chopped mint to taste

  6. 6

    Add 1 tablespoon of maple syrup

  7. 7

    Whisk in 2 tablespoons of sesame oil

  8. 8

    Stir until all ingredients are incorporated evenly. Set aside until it’s time to pour over salad.

    Rinse vegetables, pat dry

    Chop vegetables evenly. Make sure they are close to the same size.

    Crush cashews and sprinkle evenly

  12. 12

    Shake black sesame seeds over to add color and depth to your salad

    Toss & pour dressing over salad. Enjoy!
